This is a very simple way to make zucchini that is both tasty and juicy
Ingredients
2 zucchini
2 eggs
½ tsp salt
1 cup bread crumbs
1 cup grated parmesan
1 tsp crushed garlic
2 tbsp finely chopped parsley
1 tsp cayenne pepper
Directions
Preheat oven to 400˚F
Clean, remove ends and slice zucchini lengthwise about ¼ inch thick with skin on. I use the mandolin to get even slices
Scramble eggs and salt in a bowl
Mix bread crumbs, parmesan, garlic, parsley and paprika in a bowl but then put on a plate to be able to coat the length of zucchini
Dip zucchini in egg then coat each side with bread crumb mix
Lay on a parchment paper coated cookie sheet
Bake for 20 minutes turning zucchini over after 10 minutes
Serve as a side dish to any meat dish or serve with my Homemade Ranch Dip
