Serves: 2 - 3
Very simple chicken dish to make when you just don’t know what to make. I’ve served with a side of my Peas and Corn side dish and Side Salad to make it a full meal.
Ingredients
3 tbsp margarine
1 large onion – julienned
3 chicken breast
Lowry’s garlic salt or salt and pepper
¾ cup flour
1 tbsp margarine
¾ cup white wine
Directions:
Heat large coverable skillet and melt margarine
Cook onions until they are caramelized. About ten minutes stirring occasionally
In the meantime slice chicken into three filets
Season chicken with garlic salt or salt and pepper to taste
In between two pieces of saran wrap pound the chicken and set aside until ready to cook
When onions are cooked use a slotted spoon and transfer onions to plate, set aside
Add 1 tablespoon margarine into skillet and let melt
Flour both sides of chicken
Add chicken and cook first side until it starts getting golden brown, about three minutes
Turn chicken and cook three minutes
Add onions and pour in wine and stir until combined
Cover and reduce heat to simmer
Cook for ten minutes stirring occasionally
Chicken and onions will be with a thick sauce
Plate with side of corn and peas and side salad
