Whiskey Honey Veggie Meatloaf

Serves: 6


I wanted a lighter meatloaf therefore this one has more veggies than meat, but add some fillings and it makes this one super moist and light. I topped it with a whiskey honey sauce for the last ten minutes and it added so much more depth to the flavours.

Ingredients

2 tbsp oil

1 ½ cups diced onions

1 ½ cups shredded carrots

1 cup finely chopped celery

1 ½ cup diced bell pepper

1 tbsp garlic salt or salt and pepper to taste

1 ½ cup shredded zucchini

1 cup vegetable broth

Cooking spray

1 pound ground turkey

1 pound ground pork

1 ½ cups breadcrumbs

¾ cup grated parmesan

1 tbsp garlic salt or salt and pepper to taste

1 tbsp dried parsley or 2 tbsp fresh finely chopped parsley

1 egg

9 slices hot capicola or any other sliced meat you want

Shredded four cheese blend

¼ cup vegetable broth

½ cup ketchup

¼ cup whiskey

3 tbsp honey


Directions

  1. Heat oil in medium saucepan on high and add onions, carrots, celery and pepper and garlic salt

  2. Sauté for five minutes and stir in zucchini and let cook for two minutes

  3. Pour in vegetable broth and let cook until liquid has been absorbed, veggies will be cooked

  4. Let sit until veggies are fully cooled down. I usually make this in the morning and they are ready for when I put together the meatloaf for dinner

  5. Preheat oven 390°F and spray a large covered roasting pan with cooking spray

  6. In a large bowl add turkey, pork, breadcrumbs, parmesan, garlic salt, parsley and egg and with your hands combine everything together well

  7. Add cooled down veggies and combine everything well

  8. Turn meat onto a parchment paper and using your hands flatten to ½ inch thick rectangle

  9. Top with capicola all over meat

  10. Sprinkle four cheese blend on top of sliced meat

  11. Using the parchment paper roll meat up on the short side

  12. Once fully rolled used your hands to shape meatloaf tightly

  13. Turn meatloaf into roasting pan and cook in oven for 20 minutes

  14. Pour in veggie broth into pan and swirl pan around so juice goes around meatloaf, bake for another 20 minutes

  15. Mix together ketchup, whiskey and honey and pour over meatloaf and bake for 10 more minutes

  16. Remove from oven and let sit for five minutes before serving
