Vegan Peanut Noodles

Serving size 3 - about 530 calories per serving

Ingredients Noodles

250 grams rice noodles

1 tbsp oil

1 medium onion, sliced

1 each of yellow, orange and red pepper, sliced

3 cups cooked broccoli florets (I put in microwave)

1 tbsp soy sauce

½ cup water

Peanut sauce (per recipe)

Sesame seeds

¼ cup crushed peanuts

Ingredients Sauce

¼ cup natural creamy peanut butter

3 tbsp lime juice

2 tbsp tamari

1 tbsp sriracha sauce

1/2 tsp maple syrup

1 – 3 tbsp water

Directions​​

  1. Make peanut sauce by whisking together peanut butter, lime juice, tamari, sriracha sauce and maple syrup. Whisk in water, 1 tbsp at a time to reach drizzle able consistency. Set aside

  2. Cook rice noodles according to packaging

  3. Heat oil in skillet on high heat

  4. Add onions and peppers and sauté until golden and tender

  5. Add broccoli and soya sauce and stir everything together

  6. In a large bowl toss noodles with peanut sauce

  7. Heat vegetables and add noodles to pot. Stir until ingredients are well combined

  8. Serve and top with sesame seeds and crushed peanuts
