Serving size 2 - about 700 calories per serving
Ingredients
1 large ripe banana
1 cup blueberries
2 tbsp brown sugar
¼ tsp salt
2 tbsp vegetable oil, plus extra for cooking
1 cup self-rising flour
½ tsp baking powder
150ml almond milk (or other non-dairy milk you like)
1 tbsp vanilla
Syrup
Extra fruit to serve on tip of pancakes
Icing sugar to sprinkle
Directions
In a mixing bowl mash the banana and stir in sugar, salt, oil and vanilla.
Add flour, baking powder and blueberries and stir together
Make a well and gradually whisk the milk in
The batter will be thick and droppable in consistency
Spread some oil in a non-stick frying pan using a paper towel
Add 2 tbsp of the batter and depending on size of your pan you may be able to make 3 at a time
Fry on each side for 2-3 minutes
Serve with syrup and extra sliced banana, blueberries and other fruit you may like and top with sprinkle of icing sugar
