Weston my grandson has an incredible imagination and he loves coming up with baking ideas for me. This morning when he woke up from a sleep over his creative mind said let’s make a pancake cake. Well the only pancake I could think of for making into a cake was crepes. It truly did turn out sinful…..
Ingredients for Crepes
2 cups flour
4 eggs
1 tbsp vanilla
1 cup milk
1 cup water
½ tsp salt
4 tbsp melted butter
Oil for crepe or frying pan
Ingredients for berries and cream
2 cups sliced strawberries
2 cups raspberries
2 tbsp sugar
1 tbsp lemon juice
340 g jar of whipped buttercream
2 cups light Cool Whip
1 tbsp vanilla
Directions for crepes
In a large bowl combine flour and eggs with a fork
Add vanilla and stir well
Alternating milk and water pour into flour mixture and mix well with whisk
Add salt and melted butter and mix well
Heat a lightly oiled crepe pan
Pour about ¼ cup batter in pan for each crepe
Tilt pan with a circular motion so batter coats pan evenly
Cook the crepe for about 2 minutes on each side
Lay them in between slices of wax paper and put in the fridge to cool
Directions for berries and cream
Combine strawberries, raspberries, sugar and lemon in a bowl and put in the fridge
In a bowl add whipped buttercream, Cool Whip and vanilla
Using a spatula fold everything together until well blended
Put in the fridge until crepes are cool
Directions to put it all together
Place a crepe on bottom of plate
Spread cream on the crepe
Spread berries on cream
Place two crepes on top and spread cream and berries
Place two crepes on top and spread cream and berries
Top with final crepe and spread cream
If you want to write something on the cake do so with icing
Sprinkle with sprinkles to make look pretty
Put in the fridge for two hours before serving
