Makes: 60 – 70 different size cookies
We love shortbread at Christmas so thought I’d create a recipe for our Valentine’s. I’m not the best at decorating but the taste does make up for the presentation :-)
Ingredients
2 cups softened butter
1 cup icing sugar
1 tbsp vanilla
3 ½ cups flour
½ cup cornstarch
½ cup good dark chocolate
Chocolate melting wafers
Red sugar sprinkles
Direction
Preheat oven 350°F
In a large bowl cream butter until light and fluffy (I used a stand mixer)
Add sugar and vanilla and beat until light and fluffy
Sift flour and cornstarch together and slowly beat into butter mixture until well combined
Finely chop chocolate and using a wooden spoon stir into dough
Turn dough over on to a lightly floured counter
Roll out dough to ½ inch thick
Use heart shaped dough cutters to cut out heart shapes (I used three sizes)
Place on baking sheet and bake until bottoms are lightly browned
Cool on baking sheet for five minutes and place cookies on cooling rack to let fully cool
Melt melting chocolate in a microwaveable container. I microwave in 30 second intervals and stop and whisk until it is smooth. This prevents chocolate from burning
Using a squeeze bottle or icing bag decorate cookies
Quickly sprinkle sugar and let chocolate harden before freezing
These can be frozen up to three months but I’m sure they will disappear before that.
