Twisted Chicken Parm

Serves: 4


Traditional chicken parmesan gets coated with egg and breadcrumbs fried and then baked. This twisted version is a lot healthier as it is baked and doesn’t have the egg breadcrumb coating. Delicious over rice.


Ingredients

Tomato Sauce (recipe below)

4 chicken breasts

Garlic Salt or salt and pepper to taste

8 slices ham

Friulano cheese (can use mozzarella)

4 servings cooked rice


Ingredients for tomato sauce

Olive oil

2 cloves garlic finely chopped

Can tomato sauce

1 tsp oregano

½ tsp salt


Directions for tomato sauce

  1. Heat small saucepan and fry garlic until golden

  2. Add tomato sauce, oregano and salt and stir

  3. Let simmer for 15 minutes


Directions for chicken

  1. Make tomato sauce and put on bottom of coverable baking dish

  2. Preheat oven 390°F and make rice you like

  3. Pat dry chicken and make four cuts about half way into the chicken across short side of chicken

  4. Sprinkle with garlic salt

  5. Cut ham slices in half and add a piece in each slot of chicken

  6. Cut cheese into ½ wide and 1 ½ inch long logs and place one in each slot of chicken next to ham

  7. Place chicken on top of sauce and cover

  8. Bake for 45 minutes, let sit for five minutes before serving over rice
