Serving size 4 - about 380 calories per 2 halves stuffed pepper
Ingredients
3 red peppers
2 yellow peppers
1 tbsp olive oil
1 cup finely chopped onion
1 tbsp minced garlic
1 pound ground turkey
½ tsp dried rosemary
½ tsp dried thyme
½ tsp dried lavender flower
1 tsp paprika
½ tsp salt
1 can diced tomato
2 tbsp Frank’s hot sauce
1 cup shredded mozzarella cheese
2 tbsp bread crumbs
1 batch asparagus
Cooking spray
Garlic salt
1/4 cup shredded mozzarella cheese
Directions
Preheat oven to 350˚F
Line baking sheet with parchment paper
Cut peppers in half lengthwise, remove seeds and place on baking sheet
In large skillet heat oil and add onion and garlic and sauté until onion is soft
Add turkey and cook until brown
Sprinkle all seasonings and mix well
Add can of diced tomatoes and hot sauce
Cover and simmer until liquid has evaporated
Stuff peppers with mixture
Sprinkle mozzarella on peppers and top with bread crumbs
Bake for 30 minutes and let sit for five minutes, serve with asparagus
Clean asparagus and place on baking sheet
Spray cooking spray on the asparagus
Sprinkle with garlic salt
Place in same oven on different rack
When ready sprinkle mozzarella and grill on high until golden
Amazing meal with white or red wine.
