If you love pasta carbonara as well as turkey and asparagus, then you will fall in love with this recipe. Full of flavour and creamy, it is a meal all by itself.
Ingredients
500 grams dried pasta
2 tbsp olive oil
1 medium onion finely chopped
1 pound turkey breast cut into 2 inch chunks
½ tsp garlic salt
½ tsp thyme
2 cups asparagus cut into 1 ½ inch lengths
¾ cup chicken or vegetable broth
2 hot chili peppers finely chopped (optional)
3 eggs
1 cup grated parmesan cheese
¼ cup milk
Direction
Cook pasta per directions on package
Heat oil in large wok style pot and sauté onions for two minutes on high heat
Add turkey, salt and thyme and mix well
Stir in asparagus and sauté for two minutes
Pour in broth and mix everything well, cover and continue to cook on high heat, stirring occasionally
Add chili peppers after five minutes and lower heat to medium and continue to cook until liquid has reduced to a thick sauce
In a medium bowl whisk together eggs, ¾ cup parmesan cheese and milk
Add cooked pasta to the pot and combine everything well
Pour in egg and cheese mixture and mix well
Cook for three minutes and serve immediately
Sprinkle parmesan on each serving
