Turkey Pasta Alfredo

I made this with a rice corn pasta that my cousin Mary suggested I try to make it gluten free. Once again, like the whole wheat pasta I thought I would lose flavour but I was surprised how good it was. This turkey Alfredo recipe has two types of cheese and if you want to kick it up a notch you can sprinkle some hot pepper flakes when serving. Brody and Blake were over and they absolutely devoured this Alfredo pasta.


Ingredients

500 g gluten free pasta

1 tbsp olive oil

½ cup onion finely chopped

1 tbsp minced garlic

400 g fresh turkey breast chopped into ½ inch chunks

½ tsp salt

¼ cup butter

¼ cup flour

½ tsp paprika

2 cup heavy cream

¼ cup grated parmesan cheese

½ cup shredded Friulano Montasio cheese

Up to 1 cup of pasta water

¼ cup finely chopped parsley

Grated parmesan for sprinkling on top of pasta

Red hot pepper flakes to sprinkle on top of pasta (optional)


Directions

  1. Cook pasta per instructions on package

  2. Heat oil in large skillet and sauté onion and garlic until onion is soft

  3. Add turkey and sauté until turkey is done

  4. Add salt, butter, flour and paprika into meat and mix everything together until butter is all melted

  5. Pour in cream and mix until all blended

  6. Stir in parmesan and Friulano cheese, the sauce will be thick

  7. Using a large straining scoop place pasta into sauce allowing some pasta water to be incorporated. Add enough water to make the sauce smooth

  8. Taste for salt and pepper

  9. Add the parsley and mix well

  10. Plate and sprinkle with parmesan and hot pepper flakes if you want
