Makes 9 tortillas
You wouldn’t think rice and tortilla works but it truly does. The rice, ham, pepper, onion and feta are sautéed to infuse flavours that when wrapped in a tortilla and baked, topped with more cheese makes it a great dish. I served with my tomato, cucumber, bocconcini salad. The pairing was perfect. Brody helped me put it all together and both Brody and Blake were surprised how good it was. They cleaned their plate to that means it is a kid friendly meal.
Ingredients
1 tbsp olive oil
1 finely chopped bell pepper
½ finely chopped onions
1 cup cube chopped ham
1 tsp Lawry’s garlic salt or salt and pepper to taste
1 tsp paprika
2 cups cooked rice
1 cup cube chopped feta cheese
9 tortillas
Cooking spray
4 cups shredded cheese (divided in two)
¼ cup grated parmesan cheese
¼ cup finely chopped parsley
Directions
Preheat oven 425°F
Heat oil in large skillet and sauté pepper and onions until onion is translucent
Add ham and spices and sauté for five minutes
Stir in cooked rice and sauté for two minutes
Add feta cheese and stir until well combined and take off heat
Spray baking pan with cooking spray
Use two cups shredded cheese to sprinkle onto middle of each tortilla
Scoop 1/9th of rice mixture on top of shredded cheese, roll up the tortilla and place in pan
Do this with all the tortillas
Bake for 20 minutes until tortilla are golden
In a bowl mix together the rest of shredded cheese, parmesan and parsley
Take tortillas out of oven and sprinkle all with cheese mixture and bake for 15 minutes
Serve with tomato, cucumber, bocconcini salad
