Tiramisu

Tiramisu or “Pick me Up” is a creamy dessert that originates in Friuli Italy. When I met Gianni he ranted about no one makes Tiramisu as Bruno a chef who owned a restaurant in Udine. On our honeymoon we went to Udine and I was lucky to make this delicious light and airy dessert. It took me several takes at home to get it perfect. This is like no other Tiramisu you have tasted in North America.

I do want to warn you that you have to use lots of bowls.

Ingredients

One package of Lady Finger cookies

1/2 cup sugar

1 - 500g Mascarpone Cheese

1/2 litre whip cream

4 eggs (separated)

2 cup espresso coffee

1/4 cup Strega liquor (or spiced rum)

Directions

  1. Mix sugar and egg yolks in a large bowl, until light and fluffy

  2. Mix whip cream until firm peaks form

  3. Mix egg whites until firm peaks form

  4. Fold whip cream into egg and sugar mixture

  5. Fold egg whites into mixture now, it will be light and fluffy once all folded

  6. Mix coffee and liquor together

  7. Dip lady fingers into coffee liquor mix until lightly soaked

  8. Make a layer of cookies in a 9" x 11" pan

  9. Add layer of mascarpone on top of cookie layer

  10. Add another dipped cookie layer on mascarpone layer

  11. Add final layer of mascarpone

  12. Sprinkle cocoa or shredded chocolate on top of mascarpone

You need to keep in fridge for two days to have ingredients absorb the flavorings

Or you can place in freezer until you are ready to use
