Three Cheese Pork Rolls

Serves: 2 – 3


This pork is rolled up with veggies and cheese and then baked. Simple to make and tastes delicious with a side salad. I opted for Cold Green Bean Salad and a tomato sliced with some balsamic glaze. Served with a glass of rose, made this a delicious meal


Ingredients

Cooking spray

5 – 6 pork sirloin chops

Garlic salt or salt and pepper to taste

5 – 6 tbsp cream cheese

2 shallots finely chopped

1 cup shredded zucchini

1 cup spinach

5 – 6 pieces 2 inch pieces ½ inch thick fresh mozzarella

3 slices Gouda cheese


Directions

  1. Preheat oven 390°F and spray a baking pan with cooking spray

  2. Place pork chops on saran wrap

  3. Season with garlic salt

  4. Cover with another piece of saran wrap and pound pork until meat is ¼ thick

  5. Spread 1 tbsp cream cheese on each pork chop

  6. Sprinkle each pork chop with shallots

  7. Divide shredded zucchini on each pork chop

  8. Lay spinach on top of zucchini

  9. Place a piece of mozzarella at the end of each pork chop

  10. Starting at the end with the mozzarella roll the pork until you get to the end

  11. Place the rolls into baking pan and sprinkle any leftover shallots on top

  12. Bake for 40 minutes and top each piece with ½ a slice of Gouda cheese

  13. Once cheese has melted remove from oven and let sit for five minutes before serving
