I’ve got a lot of spearmint growing in the garden therefore wanted to create a few dishes that are fresh and tasty. This Feta Spearmint Dip is great with veggies, bread, Fried Meatballs or even Zucchini Parm.

Ingredients
1 cup crumbled drained feta
1 cup sour cream
¼ cup finely chopped shallots
Zest of ½ lemon
Juice of on lemon
1/8 cup finely chopped spearmint
1 tbsp olive oil
Directions
Add all ingredients into small food processor and pulse until mixed but still a little chunky
Spoon into a sealable container and keep in fridge for 4 to 5 days
Letting it sit for a few hours before using gives the sour cream time to really absorb all the flavours.
