I had originally made this with leftover taco meat but then decided to make it for my grandsons when they were over as they love tacos and pasta.
Ingredients
1 500 gr package pasta
1 finely chopped shallot
1 chopped bell pepper
1 pound ground turkey
6 tbsp taco seasoning (to your taste)
Cooking spray
½ cup shredded montasio cheese
½ cup shredded aged provolone cheese
½ cup shredded caciocavallo cheese
1 cup shredded mozzarella
¼ cup grated parmesan cheese
Directions
Preheat oven 390°F
Cook pasta per directions on package
Heat oil and sauté shallots & pepper in large wok style skillet
Add ground turkey and cook until turkey is cooked
Add as much taco seasoning you like
Stir in cooked pasta and mix until pasta is well coated
Spray baking pan with cooking spray
Spread half the pasta mixture into pan
Mix all cheeses, except for parmesan together and sprinkle half on first layer of pasta
Add the rest of the pasta to pan and sprinkle with the rest of the shredded cheese
Sprinkle parmesan on top and place in oven for 25 minutes
Let sit for five minutes before serving
