Sweet and Sour Meatball Salad

Makes 15 meatballs


I wanted to make a warm salad that was sweet, sour and a little hot and therefore this meatball recipe fits the bill. What made it better is Gianni gave me the best compliment when he tried it, he said you need to make this when we have guest over as this is absolutely delicious. Give it a try and let me know what you think.


Ingredients

1 pound ground pork

2 eggs beaten

½ cup finely chopped onion

1 tbsp minced garlic

¼ cup finely chopped parsley

1 cup breadcrumbs

½ cup grated parmesan cheese

1 tsp salt

½ tsp paprika

2 tbsp cornstarch

1 cup water + ¼ cup for cornstarch

1 cup apple cider vinegar

1 cup ketchup

2 cup brown sugar

4 tbsp soy sauce

1 tbsp hot pepper flakes (optional)

Steam fried noodles

Chopped Romaine lettuce

Shredded carrots


Directions

  1. Preheat oven to 400°F and line a large baking sheet with parchment paper

  2. In a large bowl mix together pork, eggs, onion, garlic, parsley breadcrumbs, parmesan, salt and paprika.

  3. Roll into meatballs around 1 ½ inches in size and place on baking sheet

  4. Bake for 20 minutes until golden and if you use a thermometer it should read 165°F

  5. Take out of oven and let sit until you are ready to make dinner

  6. Whisk ¼ cup water and cornstarch in a small bowl

  7. Mix together in a large bowl cornstarch mixture, 1 cup water, vinegar, ketchup, brown sugar, and soy sauce

  8. Pour mixture into a medium sauce pan and add hot pepper flakes if you like a little heat

  9. On high heat allow sauce to thicken then add the meatballs

  10. Let meatballs simmer for five minutes

You can serve self-serve style by having a bowls of steam fried noodles, Romaine lettuce, shredded carrots and meatballs and sauce, or you can place Romaine lettuce on plate, top with shredded carrots, fried noodles and then meatballs and sauce.
