Sundried Tomato Chicken

Serves: 2


I’ve been wanting to make something with sundried tomatoes and decided to make a chicken dish that is saucy and goes great on top of plain rice. Making this a very filling meal.


Ingredients

Sundried in oil tomatoes

½ cup water

2 tbsp olive oil

2 chicken breast

1 cup heavy cream

1 cup grated parmesan cheese

1 tsp red pepper flakes

1 tsp dried rosemary

Salt and pepper to taste

Grated parmesan cheese


Directions

  1. Place sundried tomatoes and water in blender and process until it resembles a tomato sauce

  2. Heat oil in large skillet on high and cook for five minutes on each side

  3. Remove chicken from skillet and set aside

  4. To the skillet add sundried tomato sauce and cook for two minutes

  5. Stir in cream, cheese, pepper flakes, and salt and pepper to taste

  6. Reduce heat to simmer and return chicken into pan

  7. Cook for 20 minutes until chicken is cooked and sauce has become thick

Serve over plain rice with a sprinkle of parmesan cheese
