Makes 1 loaf
Banana bread is loved by kids and because this one has pineapple in it the kids can’t stop eating it. You can easily make it into small or large muffins.
Ingredients
3 ripe bananas
½ cup honey yogurt
½ cup softened butter
1 cup sugar
2 eggs
1 tbsp vanilla
1 cup crushed pineapple - juice squeezed out
1 ½ cup flour
1 tsp baking soda
½ tsp salt
1 cup chopped mixed walnuts and pecans
Cooking spray
½ cup brown sugar
1 tbsp cinnamon
Directions
Preheat oven 350°F
In a bowl mash bananas and stir in yogurt
Using a large bowl and mixer cream butter and sugar until fluffy
Add eggs and vanilla and mix well
Using a spatula fold in the banana mixture and pineapple until blended
Sift flour, baking soda and salt into the bowl and lightly fold into batter
Stir in walnuts and pecans – batter will be chunky
Spray 9 x 5 inch loaf pan with cooking spray
Pour dough into loaf pan
Mix together brown sugar and cinnamon
Sprinkle brown sugar mixture on top of loaf
Bake for one hour, until golden brown, and toothpick inserted in center comes out clean
Cool in pan for five minutes then run knife around pan and let cool on wire rack
