Stuffed Turkey Breast 3 Ways

Each Breast Serves: 4


For Christmas Eve dinner I opted to make three types of stuffed turkey breasts that are wrapped in bacon. If you have a dinner party for more than 10 people, making these three gives everyone an option. Otherwise you can make one anytime you just want turkey for dinner and still want to fancy it up. I usually make it ahead of time and let sit in the fridge until I’m ready to wrap with bacon and bake it.


Ingredients

3 Half turkey breasts

Lowry’s garlic salt (or salt and pepper)

2 packs of Stove Top stuffing (or use your favourite)

1 Philadelphia spreadable cream cheese

1 finely chopped onion

Asparagus spears

Pack of bacon


Directions

  1. Make stuffing per package directions and let cool

  2. Trim fat off of all turkey breasts

  3. Butterfly all the breasts

  4. Sprinkle Lowry’s garlic salt (or salt & pepper) on one side of each breast

  5. Place meat in between two pieces of saran wrap

  6. Pound meat with cleaver until ½ inch thick

  7. Remove the top layer of saran wrap


Onion and Cream Cheese Stuffed Turkey Breast

  1. For the first stuffed breast remove the top layer of saran wrap

  2. Spread as much cream cheese you want all over the breast and press down a little

  3. Sprinkle onions all over the cream cheese

  4. Roll breast tightly starting from one end

  5. Using the bottom layer of the saran wrap, seal the breast and set aside


Stuffing Stuffed Turkey Breast

  1. For the second stuffed breast remove the top layer of saran wrap

  2. Spread half the stuffing on top of breast press down a little

  3. Roll breast tightly starting from one end

  4. Using the bottom layer of the saran wrap, seal the breast and set aside


Stuffing and Asparagus Stuffed Turkey breast

  1. For the third stuffed breast remove the top layer of saran wrap

  2. Spread half the stuffing on top of breast press down a little

  3. Lay asparagus on top of stuffing leaving about two inches on each end

  4. Roll breast tightly starting from one end

  5. Using the bottom layer of the saran wrap, seal the breast and set aside


Continue with these instructions for all breasts

  1. At this point I put all three stuffed breasts into a large Ziploc bag and let sit in refrigerator until I’m ready to cook it.

  2. Pre-heat oven to 390˚F

  3. Do this for each turkey breast, lay six strips of bacon on counter

  4. Unwrap one of the breasts and place on top of bacon strips

  5. Crisscross bacon over the turkey roll

  6. Place into coverable bake pan, you can add all three into a large pan

  7. Bake covered for 50 minutes

  8. Uncover and bake another 10 minutes for bacon to crisp up

  9. Turkey is ready when thermometer reads 160˚F

  10. Take out and let rest for 10 minutes

  11. Cut and serve with veggies and a salad

Rose or white wine goes very well with this meal
