Stuffed Prosciutto Pork

Serves: 6


These prosciutto wrapped pork stuffed with onions, peppers, zucchini and mozzarella is delicious and easy to make. Served with a side salad and a piece of bread it becomes a meal. You can easily cut recipe in half and make one roll.


Ingredients

2 tbsp olive oil

1 cup chopped onions

1 ½ cup chopped bell pepper

2 shredded zucchini

1 tsp Lawry’s garlic salt or salt and pepper

16 slices Prosciutto

12 pork medallions

Lawry’s garlic salt or salt and pepper

1 tbsp red pepper flakes

Fresh mozzarella

1 tbsp olive oil


Directions

  1. Heat oil in large skillet and add onions and bell pepper. Cook until lightly browned

  2. Add zucchini and garlic salt and sauté until zucchini is cooked, set aside until cooled

  3. Lay out 8 pieces of prosciutto onto 2 pieces of saran wrap and set aside

  4. Lay pork medallions on saran wrap and sprinkle with garlic salt or salt and pepper

  5. Place another piece of saran on top of pork and pound to ¼ inch thick

  6. Lay 6 pieces of the pork on top of each pile of prosciutto

  7. Sprinkle red pepper flakes on to pork

  8. Spread ½ the veggie mixture onto each prosciutto pork

  9. Top with sliced mozzarella

  10. Roll up each prosciutto pork with saran wrap and place in fridge for an hour

  11. Preheat oven to 390°F

  12. Line baking pan with parchment paper

  13. Take off saran wrap and place both meat rolls into pan

  14. Brush with olive oil and bake for 45 minutes
