Strawberry Strudel

Makes 1 large Strudel


I made this strudel to try out my Homemade Puff Pastry recipe. I really did thing it was too hard to make my own but actually it was easy and made this dessert delicious. Next time however I will probably use ½ the dough and roll out pastry to 1/8th of an inch thick as it took an hour to cook at ¼ inch thick.


Ingredients

1 full batch of my Homemade Puff Pastry

2 cups chopped strawberries

¼ cup white sugar

3 tbsp water

1 tbsp cornstarch

1 340 gram tub of soft cream cheese

1 170 gr English Double Cream (I buy as Save-on-Foods in Deli section)

1 tsp vanilla

½ cup icing sugar

1 egg

1 tsp water


Vanilla glaze Ingredients

½ cup icing sugar

1 tsp vanilla

1 tbsp milk or more if required


Directions

  1. If using frozen puff pastry thaw out on counter for two hours or overnight in fridge before using

  2. In small sauce pan add strawberries, sugar, water and cornstarch and stir until cornstarch has dissolved

  3. On medium-high heat bring mixture to a boil

  4. Lower to a simmer boil and cook for five minutes stirring constantly – see video below

  5. Remove from heat and pour into a bowl so it can cool before making strudel

  6. In a medium bowl add cream cheese, double cream, and vanilla

  7. Sift icing sugar into bowl and using an electric mixer beat everything until light and fluffy and chill in fridge until ready to assemble strudel

  8. Preheat oven 420°F and line large baking sheet with parchment paper

  9. If using my puff pastry, roll it out to rectangle shape so it is ¼ inch thick

  10. Place pastry on baking sheet and spread cream cheese down the middle of puff pastry leaving an inch on both long ends

  11. Spread strawberry filling over cream cheese and fold both long edges of pastry into filling

  12. Cut puff pastry into strips on either side of cream cheese – per photo

  13. Criss cross the strips over the filling – per photo

  14. Beat egg and water together and brush strudel with egg wash

  15. Bake for 50 – 60 minutes, until strudel is golden and cooked

  16. Let cool and in the meantime make vanilla glaze

  17. Sift icing sugar into bowl

  18. Add vanilla and milk and whisk together. If too thick add a little more milk until you get desired consistency

  19. Once strudel has cooled drizzle with glaze and sprinkle some icing sugar and serve
