Stir Fried Rice Restaurant Style

Serves: 4


I love Chinese fried rice I get from takeout and wish I could just order that. Therefore I created this recipe that when I feel like having fried rice that tastes like restaurant bought I can easily whip it up. I served this with my Rum Honey Pork Chops.


Ingredients

2 cups white rice

4 cups water

1 tsp salt

½ cup chopped carrots

2 cups water

½ cup frozen peas

1 tbsp olive oil

½ cup finely chopped onions

2 eggs

Soy sauce to taste

Sesame oil


Directions

  1. In saucepan bring to boil rice, 4 cups of water and salt

  2. Reduce heat, cover and simmer for 20 minutes or until rice is cooked, drain in colander

  3. At the same time boil carrots in 2 cups of water for 5 minutes

  4. Add peas into carrots and cook for 2 minutes

  5. Drain the veggies in colander

  6. Heat wok over high heat and pour in olive oil

  7. Sauté onions until translucent

  8. Add veggies and cook for 2 minutes

  9. Add rice and sauté for a few minutes then pour in as much soy sauce as you want and mix well

  10. Crack eggs into wok and stir quickly to scramble eggs with veggies

  11. Stir in cooked rice and pour in as much soy sauce you want

  12. Once rice is coated with soy sauce drizzle as much sesame oil you like and toss everything together

Serve as a side dish
