This is great when you just don’t know what to make for dinner. I always have tortilla shells, cooked chicken, cream cheese and Friulano cheese on hand so put them all together with some onions and pepper then bake them for gooey goodness. You can easily make these vegetarian if you omit the chicken and add cauliflower and broccoli.
Ingredients
2 tbsp olive oil
2 cups chopped onions
2 cups chopped bell peppers
2 cups chopped cooked chicken
¼ cup Thai sweet red chili sauce
2 tbsp Frank’s red hot sauce
1 tsp Lawry’s garlic salt or salt and pepper
6 tortilla shells
6 tbsp Philadelphia cream cheese – light
Cooking spray
3 tbsp Thai sweet red chili sauce
3 cups shredded Friulano Montasio cheese
Directions
Heat oil in skillet on high heat and add onions, peppers and chicken
Cook on high heat until onions are soft and everything is lightly browned
Pour in Thai and Frank’s sauce as well as garlic salt. Stir well
Take off heat and let cool down
Preheat oven to 390°F
Spray small baking dish with cooking spray
Spread 1 tbsp cream cheese on each tortilla shell
Scoop one sixth of the chicken mixture on to each tortilla shell
Wrap up each tortilla tight and place into baking dish wish seal on bottom
Spread some Thai sauce on each tortilla
Sprinkle Friulano cheese on each tortilla
Cook for 15 minutes until cheese if fully melted
Turn oven to broil and cook until golden
Serve with a tossed salad
