Rum Eggnog Mini Loaf

Makes 10 baby loaves

Ingredients

2 eggs

1 ½ cup eggnog (don’t use low fat)

2 tsp spiced rum

1 cup sugar

1 tsp vanilla

½ cup butter at room temperature

2 ¼ cup flour

1 small package of instant vanilla pudding

2 tsp baking powder

½ tsp salt

¼ tsp nutmeg

1 tsp cinnamon

Cooking spray

Directions

  1. Pre-heat oven to 350˚F and spray mini loaf pans (or you can use paper individual cake liners which I've also added a couple of photos)

  2. In a large bowl mix together eggs, eggnog, rum, sugar, vanilla and butter with electric mixer.

  3. Butter will be chunky and that is the way it is supposed to be

  4. Sift together flour, pudding mix, baking powder, salt, nutmeg and cinnamon

  5. Add the dry ingredients to the wet and blend until incorporated

  6. Avoid over mixing – the butter will remain chunky and will melt when baking

  7. Scoop thick dough into mini loaves pan. This recipe makes 10 loaves therefore add water to the empty cups

  8. Bake for 30 minutes or until toothpick comes out clean

  9. Let cool before icing

Rum Eggnog Glaze

1 cup sifted icing sugar

2 tbsp spiced rum

2 tsp eggnog

Whisk together and pour over mini loaves
