Chicken Cordon Blue is always a favourite in the house. This one is made into a roll and then served on top of veggies. Adding hot pepper jelly gives it a yummy zing.
Ingredients
4 boneless skinless chicken breasts
Lawry’s garlic Salt to taste or salt and pepper
2 eggs beaten
¼ cup milk
1 cup breadcrumbs
½ cup grated parmesan cheese
¼ cup finely chopped parsley
8 slices ham
Hot pepper jelly
4 slices Swiss cheese
3 cups broccoli flowerets
3 cups cauliflower flowerets
1 can artichoke hearts
Can of black olives
1/4 cup oil
2 tbsp Lawry’s garlic salt
1 cup shredded mozzarella cheese
Ingredients – Balsamic Dressing
¼ cup balsamic vinegar
¼ vegetable oil
2 tbsp honey
1 heaping tsp wholegrain Dijon mustard
Salt to taste
Directions
Filet the chicken in half and sprinkle with garlic seasoning or salt and pepper
Put chicken in between two pieces of saran wrap and pound each breast
Beat eggs and milk together in a bowl
Mix bread crumbs, parmesan cheese and parsley into a plate
Dip chicken into eggs and then coat with breadcrumb mixture
Press down so breadcrumbs are well coated onto chicken
Lay each piece of breaded chicken on to a piece of saran wrap and overlap the chicken to the next piece by an inch
Add a layer of ham on top of the chicken
Spread hot pepper jelly on top of ham
Add a layer of Swiss cheese on top of jelly
Using saran to pull up the chicken on the long, roll the chicken up tightly
Seal with saran and put in freezer for 20 minutes
In the meantime put broccoli, cauliflower, artichoke, olives, oil and garlic salt in a bowl and toss well. Place in a 9 x 11 inch baking dish
Preheat oven to 390˚F
Remove saran wrap and cut chicken roll in 2 inch slices and lay on top of vegetables facing up
Bake for 30 minutes and sprinkle with mozzarella cheese
Bake for 10 minutes and then broil for 5 minutes until mozzarella is nicely toasted
If veggies are not fully cooked take chicken out and put on a platter and cook veggies until tender
Make balsamic vinaigrette and pour over veggies, mix well
Serve chicken with veggies
