I made this dish because I had leftover rice but it can be made with any rice you want to cook up. It actually amazed me how good it turned out and my grandsons loved it too.
Ingredients
1 tbsp olive oil
1 shallot finally chopped
1 bell pepper finally chopped
1 pound ground pork
1 tsp garlic salt
½ tsp paprika
2 cups chopped spinach
4 beaten eggs
1 cup grated parmesan cheese
2 cups shredded mozzarella cheese (divided)
Cooking spray
¼ cup panko
Directions
Preheat oven 390°F
Heat oil in large skillet and sauté shallot and peppers
Stir in ground pork, garlic salt and paprika and cook for five minute until pork is cooked
Stir in spinach and cook until it has wilted
Add eggs, parmesan and 1 cup mozzarella cheese and mix well
Spray a 9 x 11 inch pan with cooking spray
Spoon in rice and spread out evenly
Sprinkle panko overtop of rice
Bake for 20 minutes and top with rest of mozzarella cheese
Put oven to high broil and return pan to oven
Broil until mozzarella is golden
Let cool for five minutes and serve with a green salad
