Pulled Pork Baguettes

I had leftover Crockpot Pork Tenders and therefore decided to make pulled pork sandwiches for lunch. So if you love pulled pork sandwiches make my pork tenders for dinner and you will have leftovers for sandwiches. Of course you can always make the pork for sandwiches from the get go. I served this on my Multigrain Baguettes which paired really well with the saucy pork.


Ingredients

Leftover Pork Tenders

½ cup vegetable broth

Whole Grain Baguettes

Shredded Mozzarella


Direction

  1. Preheat oven to maximum grill or broil and line a baking sheet with foil

  2. In a skillet heat up pork tenders and broth and cook until sauce has thickened

  3. Take a piece of pork out and using a knife and for pull at it so it falls apart

  4. Place torn pork back into sauce, do this until all pork has been torn

  5. Cut baby baguettes in half and lay bottom piece on baking sheet

  6. Scoop some pork and sauce on to each piece of bread and sprinkle with mozzarella

  7. Grill until mozzarella is melted

  8. Remove and place top of baguette on top of mozzarella

Serve with a Side Salad or alone
