Pork Zucchini & Pea Medley

Serves: 2


I had some zucchini that needed to be used and wanted to augment them so I’d have a good amount of side with the pork, therefore added onions and peas and it was a great medley of flavours. Served with a simple green side salad to not take away from the main course. This one is a keeper.


Ingredients

1 tbsp olive oil

5 pork loin fast fry – remove fat edges

Lawry’s garlic salt

½ chopped onion

2 chopped zucchini

1 tbsp olive oil

1 cup sweet white wine

1 can summer sweet peas


Directions

  1. Heat oil on high in large skillet

  2. Add pork and season with garlic salt on one side

  3. Fry pork for about five minutes on each side

  4. Remove and put into a bowl, juices will seep out and we want to keep that

  5. Add onion and zucchini to skillet and mix well

  6. Pour in olive oil and sauté until zucchini is no longer white and it is starting to have brown crust

  7. Return pork into skillet, including the juices

  8. Pour in wine and let simmer for ten minutes

  9. Add peas and mix well, cook for five more minutes

Serve with a side green salad or plain rice

Goes great with a glass of white wine
