Cutlets and pasta were my mom’s go to meal when she had us over. So this recipe honours her life of feeding us that on so many occasions. But of course I have to switch it up and put my twist on it. And yes this one has a twist…..Instead of chicken I used pork. I was looking for thick pork loin chops but couldn’t find any so I used a pork loin roast which I sliced on the length to make my cutlets. This one takes a while to make but I promise it is a hit!
Each section has steps to make it easier.
Ingredients for Spaghetti Meat Sauce
2 tbsp olive oil
1 medium onion finely chopped
2 pounds ground pork
½ tsp garlic salt
½ tsp dried rosemary
½ tsp dried thyme
½ tsp dried basil
½ cup red wine
1 369 ml can tomato paste
1 213 ml can tomato sauce
1 680 ml can tomato sauce
1 540 ml can Aylmer Accents diced tomatoes
Directions for Spaghetti Meat Sauce
Heat oil on high in large sauce pan and sauté onions
Add pork and all spices and sauté until golden brown
Pour in wine and let cook on high for five minutes until will reduces by half
Stir in tomato paste until it is well combined into meat
Pour in tomato sauce and diced tomatoes
Bring to a boil then reduce heat to simmer
Let cook for three hours and in the meantime make the rest of the items
Ingredients for Pork Cutlets
1 large pork loin roast or 12 thick pork loin chops
Lawry’s garlic salt or salt and pepper to taste
6 eggs
1 cup whip cream
1/3 cup flour
4 cups breadcrumbs
2 cups grated parmesan cheese
¼ cup finely chopped parsley
Butter
Directions for Pork Cutlets
Slice pork loin into ½ slices or butterfly pork loin chops
Season with garlic salt or salt and pepper to taste
Place pork in-between two slices of saran wrap and pound both sides until pork is ¼ inch thick
Cut pieces to sizes you want for adults and children
In a medium bowl whisk together eggs, whip cream and flour
In a large bowl combine breadcrumbs, cheese and parsley
Drench pork into egg mixture then cover with breadcrumbs
Press coated pork on a cutting board with palm of hand
Heat a large skillet on high and melt ¼ cup butter
Add pork cutlet and fry each side until golden brown, about 5 minutes per side
Place cooked pork on plate covered with paper towel and keep cooking the rest of the pork adding more butter to the pan to ensure proper cooking. Keep added layers of paper towel on top of cooked pork on plate so that most of the fat is absorbed.
Set aside
Ingredients for Sauce under Cutlets
1 690 ml bottle passata sauce
1 213 ml can tomato sauce
1 tbsp olive oil
½ tsp dried rosemary
½ tsp dried thyme
1 tsp dried basil
½ tsp garlic salt
Directions for Sauce under Cutlets
In a small saucepan combine all ingredients and cook on medium heat for 20 minutes stirring occasionally. Once done set aside
Ingredients to put it all together
500 grams dried spaghetti
1 ½ cup grated parmesan cheese
2 cups shredded mozzarella cheese
Directions to Put it all Together
Preheat oven to 390°F and line a large baking sheet with aluminum foil
Cook the pasta per the instructions on the package
Pour the sauce for under the cutlets onto the baking sheet and spread the sauce out to make a ¼ in layer of sauce
Place the pork cutlets on top of the sauce
Once pasta is cooked, drain it and put it in a large bowl. Pour half of the spaghetti meat sauce on the pasta and mix it well
Pour in 1 cup of parmesan cheese into the spaghetti and mix it well
Using a large for and large spoon, take some spaghetti and twirl the pasta on the spoon
Place the pasta twirl on top of the pork cutlet
Do this until all the pasta has been placed on the pork cutlets. Putting more for the adults and less for the children
Cover pasta with a scoop of meat sauce
Sprinkle each with parmesan cheese
Top with mozzarella cheese and bake for 20 minutes
Turn on the broiler and broil until mozzarella cheese gets golden on top
Take out of oven and let sit for five minutes before serving
Watch everyone say wow Spaghetti "OHHHH"
Serve with a green salad and a tomato cucumber bocconcini salad and a glass of Italian red wine
