Peppered Pork Polenta

Serves: 3


Peppers and pork sautéed just right then put on top of creamy polenta is not only delicious but comfort food at its best. I use the instant polenta so the meal is done in 30 minutes.

Ingredients

2 tbsp Olive oil

3 cups julienned bell peppers

2 ½ julienned onion

Garlic salt to taste

1 pound stir fry pork

2 tbsp tomato paste

1 cup white wine

1 tbsp red pepper flakes (optional)

1 ½ cups Instant Polenta mix

½ cup grated parmesan


Directions

  1. Heat olive oil on high in large skillet and sauté peppers and onions for five minutes

  2. Add garlic salt to taste

  3. Cut pork into 1 inch cubes, add to skillet and sauté until browned

  4. Stir in tomato paste until well blended

  5. Pour in the wine and bring to a boil

  6. Reduce heat and let simmer until liquid reduces to a thick sauce

  7. Stir in red pepper flakes if you like a little heat

  8. While sauce is cooking make polenta per instructions

  9. Just before ready to serve stir parmesan cheese

  10. Scoop polenta into a bowl, sprinkle with some parmesan and top off with peppered pork


Tip: when making polenta wait for water to boil and then pour polenta into water slowly while constantly stirring with a whisk. This will stop polenta from clumping if you add it in all at once.
