Peas and Ham Couscous

Serves: 6


This light couscous can be served as a side dish which I’m serving as part of my Valentine meal or it can be served as a meal with a side salad and it would serve three people. You can substitute ham for another veggie such as mushroom or even tofu and make it vegetarian.


Ingredients

2 tbsp butter

¼ cup finely chopped shallots

1 cup diced ham slices

2 cup vegetable broth

1 cup frozen peas

2 cups couscous

¼ cup grated parmesan cheese


Directions

  1. Sauté shallots in butter in large skillet until translucent

  2. Add ham and sauté for two more minutes

  3. Pour in broth and add peas and bring to a boil

  4. Let cook for three to four minutes on high and check that peas have thawed out

  5. Pour in couscous and stir until mixed

  6. Take off of heat and cover for five minutes for couscous to cook

  7. Sprinkle with parmesan and stir together

Place in large bowl or serve as side to any meal
