Peanut & Pretzel Balls

Makes 40 – 60 different size balls

This one is really messy but believe me it is worth it. Everyone loves the peanut and pretzel combination and has been my families Christmas treat for many years. I bet it will be your family favourite too.

Ingredients

2 tbsp unsalted butter at room temperature

1 cup smooth peanut butter

½ cup icing sugar

2 cups crushed pretzels

Vegetable oil

3 cups dark chocolate, chocolate wafers

Sprinkles

Directions

  1. Using a spatula mix together butter and peanut butter

  2. Stir in icing sugar until well combined

  3. Stir in pretzels

  4. Pour a dab of oil in your hand and rub all over your hands. It makes it easier to roll the peanut butter balls and when dough is sticking to your hands, wash your hands and use more oil

  5. Roll balls in palm of your hand and place on baking sheet. Make balls in different sizes from ½ inch to 1 inch

  6. Freeze balls for 1 hour

  7. Line a second baking sheet with wax or parchment paper

  8. Using a tall cup or soup cup microwave half the chocolate wafers on high for 1.5 minutes.

  9. Stir well with whisk and if not fully melted microwave in ten second intervals until melted

  10. Using two forks, place one ball at a time in chocolate and cover the whole ball

  11. Place ball on baking sheet and sprinkle sprinkles on each ball before the chocolate hardens. Microwave next batch of wafers as required to cover all balls

  12. When all balls are coated and sprinkled place in freezer for 1 hour

  13. Once hardened place balls in air tight container and freeze up to six months
