Pasta Alfredo al Forno

Serves: 8

I’ve made this one full of veggies so kids get vegetables while eating pasta. It is a winner in my house all the time. Once cooked you can freeze to use another day. Just thaw and heat in oven at 350˚F for ½ hour. You can add extra mozzarella to zing it up. Omit the ham and this becomes a great vegetarian pasta.

Ingredients

2 tbsp oil

2 onions julienned

3 peppers julienned (I used 1 each orange, yellow and red)

10 slices of ham

I jar Classico Alfredo Roasted Red Pepper

½ cup milk

900 grams dry pasta

Cooking spray

Shredded parmesan

Shredded mozzarella

Directions

  1. Preheat oven to 375˚F

  2. In sauté pan heat oil

  3. Add peppers and cook on high for five minutes

  4. Add onions and cook for five minutes

  5. Add ham and cook for five minutes

  6. Cook pasta per directions on package

  7. Add Alfredo sauce and milk and simmer for 10 minutes

  8. Strain pasta and place in big bowl

  9. Add sauce and mix well

  10. Fill each casserole dish half way

  11. Sprinkle parmesan and mozzarella

  12. Fill casserole dishes with rest of pasta

  13. Spread ½ of sauce for top of pasta on each casserole

  14. Sprinkle parmesan and mozzarella

  15. Cover each dish with aluminum foil and bake for ½ hour

  16. Uncover and bake for 10 minutes

  17. Remove from oven and let sit for 5 minutes

  18. Dish out and sprinkle with parmesan

  19. Serve with garlic bread and a salad

Great with white or rose wine
