Orange Maple Pork Roast

Making a pork roast is very simple as all you have to do is combine spices and juices to enhance the pork’s natural flavours. Today we used orange and maple syrup with a few spices and we added potatoes to make it a meal in one pot.

Ingredients

3 pound loin pork roast

1 tsp garlic salt

½ tsp dried thyme

½ tsp dried rosemary

1 tsp paprika

2 tbsp olive oil

¼ cup maple syrup

1 tbsp Dijon mustard

Zest and juice of one large orange

2 tbsp margarine

680 gr pack of golden baby or fingerling potatoes

1 tbsp garlic salt


Directions

  1. Preheat oven 390°F

  2. Combine 1 tsp garlic salt, thyme, rosemary and paprika

  3. Rub the spices all over the pork

  4. Heat oil in a large skillet and sear pork on all sides

  5. Combine maple syrup, mustard, orange zest and juice together

  6. Rub roasting pan with margarine and add roast into pan

  7. Cut potatoes in ½ and place around roast

  8. Sprinkle 1 tbsp garlic salt over potatoes

  9. Brush maple orange juice mixture over roast and pour rest on potatoes

  10. Bake for 50 minutes or until roast is 145 degrees on meat thermometer

  11. Let sit for five minutes before cutting and serving with potatoes
