One Pot Roasted Lemon Chicken and Potatoes

Serves: 4


Making things in one pot is always the easiest to put together but also to clean up. You can use chicken with bone-in to make it with chicken breast to make it a lighter option.


Ingredients

1 pound sliced chicken breasts

2 tbsp olive oil

1 tsp Lawry’s garlic salt

1 tbsp dried oregano

2 cups golden baby potatoes cut in half

1 large onion julienned in large slices

2 tbsp olive oil

1 tsp Lawry’s garlic salt

1 tbsp dried oregano

Juice of two lemons


Directions

  1. Preheat oven to 390°F

  2. Place chicken in a bowl and add oil, garlic salt and oregano. Mix until chicken is well coated

  3. In a medium sized covered black granite roasting pan add potatoes, onions, oil, garlic salt and olive oil. Cover and shake well so potatoes are well coated

  4. Top potatoes with chicken strips

  5. Bake for 40 minutes then pour juice of two lemons into pan and mix will

  6. Bake for 10 more minutes and serve with a side green salad
