One Pot Pancetta Peas Pasta

This idea came together as I love all the “P” ingredients in this dish. Pancetta, peas and pasta. Add some shallots, wine and hot pepper flakes and this is one tasty dish. Best thing is it is made in one pan. Got to love that! Serve with a white wine and you have a meal.


Ingredients

1 tbsp Olive oil

1 pack pancetta

½ cup chopped shallots

2 cups peas

½ cup white wine

1 tsp salt

2 tsp red pepper flakes

1 900 ml vegetable broth

3 cups dry pasta

Boiled water

¼ cup grated parmesan

1/8 cup finely chopped parsley


Directions

  1. In large skillet heat olive oil and sauté pancetta until for two minutes on high heat

  2. Add white wine and sauté pancetta until browned up

  3. Scoop out pancetta with slotted spoon and set aside

  4. Add shallots to pan and cook until golden

  5. Add frozen peas and sauté for two minutes and add salt and pepper flakes

  6. Pour in one container of vegetable broth and let cook on high for five minutes

  7. Add pasta to the pot and let cook on high and pour in enough boiled water to cover the pasta

  8. Cook on high watching for pasta to cook. If you need to add a little more water do so.

  9. When almost cooked add in the pancetta and stir until well mixed

  10. Stir in parmesan once pasta is fully cooked

  11. Taste for salt, if it needs more either add more salt or parmesan

  12. Serve and top with grated parmesan and parsley
