One Pan Spicy Pork Broccoli and Chickpeas

If you like spicy then you can kick this one up as much as you want. I found with the amount of hot peppers I put in it gave the whole meal some heat. This meal put a lot of veggies on our plate as I served with a side salad which completed the meal perfectly.



Ingredients

5 fast fry pork chops

Olive oil

Garlic salt or salt and pepper to taste

8 cups broccoli cut into florets

1 can chickpeas, rinsed, drained and pat dried

12 whole hot pickled chili peppers, plus ¼ cup of chili pepper juice

Garlic salt or salt and pepper to taste


Direction

  1. Place baking sheet in oven and preheat oven and sheet to 400°F

  2. Rub pork chops with oil and garlic salt and place on heated sheet and cook for five minutes

  3. Meanwhile place broccoli and chickpeas in large bowl

  4. Overtop of the bowl remove stems from peppers and cut lengthwise in half and place in bowl

  5. Pour in 2 tbsp olive oil and ¼ cup of chili pepper juice into bowl and toss everything together

  6. Take baking sheet out of oven and place pork into bowl and toss together with the veggies until coated well

  7. Pour everything into the baking sheet making sure cooked side of pork is facing

  8. Cook everything for 30 minutes or until pork is cooked and broccoli is tender

Serve with a green salad
