One Pan Potato Bake

My kids love this potato bake because it is full of goodness such as ham, cheese, bacon and eggs. It is always one of our brunch items.


Ingredients

8 potatoes

Cooking spray

2 eggs

1 cup whole cream

2 tsp salt

1 tsp paprika

12 slices mozzarella cheese

12 slices ham

½ cup chopped green onions

¼ cup cooked chopped bacon

1 cup shredded Friulano Montasio cheese

¼ cup chopped parsley


Directions

  1. Wash potato skins very well and dry them

  2. With the skin on; prick each potato three times with a fork on two sides

  3. Microwave potatoes on high for ten minutes. The skins will allow the potato to steam cook but having pricked them the potato with not explode

  4. At ten minutes check if the potato is cooked by piercing it with a fork and looking for the fork to easily go through. Take out the potatoes that are cooked and if some potatoes are not done keep microwaving a minute at a time until all potatoes are cooked.

  5. Cool down the potatoes to warm

  6. Preheat oven to 390°F

  7. Skin the potatoes using a knife

  8. Using a mandolin slice potatoes

  9. In a bowl whisk together eggs, salt and paprika. Set aside.

  10. Spray 9 x 11 casserole pan with cooking spray

  11. Start layering with these layers: potato, mozzarella slices, ham slices and repeat

  12. When second layer is done sprinkle green onions and bacon on top of ham and top with shredded cheese

  13. Pour egg mixture all over the pan

  14. Cover with aluminum foil and bake for 45 minutes

  15. Take off the foil and bake for 10 more minutes

  16. Take out of oven and let sit for ten minutes before serving

  17. Sprinkle parsley before serving
