Oatmeal Pecan Bites

Serving size 40 Cookies

Ingredients

1 ½ cups rolled oats

¾ cup whole-grain wheat flour

½ tsp baking powder

¼ tsp salt

½ tsp cinnamon

½ cup butter, softened

½ cup packed brown sugar

¼ cup sugar

1 large egg

1 tsp vanilla

1 cup pecans

Directions

  1. Preheat oven to 350°

  2. In medium bowl combine oats, flour, baking powder, salt, and cinnamon. Set aside.

  3. Using a mixer, cream butter and both sugars until incorporated and add egg and vanilla. Mix thoroughly

  4. Add oat mixture and pecans to butter mixture and mix until combined

  5. Drop a teaspoon of batter onto 2 ungreased cookie sheets - one inch apart

  6. For chewy cookies bake for 9 to 10 minutes

  7. For crispy cookies bake for 11 – 12 minutes

  8. Remove from oven and let cookies rest for 2 minutes before placing on wire rack to cool
