Nonna Maria's Spaghetti & Meatballs

Serving size - the whole family

I've been making spaghetti and meatballs since I was seven years old. There is nothing better than the smells of meatballs cooking in tomato sauce all day long. The aroma fills the house and everyone who walks in knows it will be spaghetti and meatballs for dinner. The secret to this sauce is simmering it for six to eight hours. Then longer the better!

Making the meatballs

When I make meatballs I make a whole bunch at once and then freeze them.

They are ready to take out and put into tomato sauce or chicken soup. Here is a video on how to make them.


Meatballs Ingredients

4 lb. pork

3 lb. turkey

7 eggs

2 tsp salt

6 garlic cloves minced

3/4 cup finely chopped parsley

7 cups bread crumbs

3 ½ cup parmesan cheese

Milk as needed

Directions

  1. Mix meat together until well combined

  2. Scramble eggs and salt

  3. Add to meat and combine well

  4. Add garlic, parsley, bread crumbs and parmesan cheese

  5. Combine well

  6. Make large balls and try to make them the same size

  7. Make small baby meatballs for soup

  8. Use right away by placing them in sauce you have cooking (recipe for sauce follow meatballs photos below)

  9. For later use place meatballs on a cookie sheet and freeze until hard – 30 minutes

  10. Take frozen meatballs and put into Ziploc bags.

Tomato Sauce

There is nothing better than the smells of meatballs cooking in tomato sauce all day long. The aroma fills the house and everyone who walks in knows it will be spaghetti and meatballs for dinner. The secret to this sauce is simmering it for six to eight hours.


Ingredients

2 tbsp oil

3 cloves finely chopped garlic

½ chopped onion

1 369 ml can Tomato Paste

1 796 ml can Crushed Tomato

1 540 can Diced Tomato

2 cups water

Fresh basil or 1 tbsp dried basil

Lowry’s garlic salt or salt and pepper to taste

Meatballs

Pasta

Ground parmesan



Directions

  1. In a large sauce pan heat oil on high and add garlic and onion

  2. Fry until onion starts to get golden

  3. Add Tomato Paste and stir well with onion and garlic

  4. Add crushed and diced tomato and stir well

  5. Add basil and water and stir well

  6. Bring to a boil and then turn down to medium heat

  7. After ½ hour add meatballs and raise heat until sauce is boiling

  8. Keep on high for five minutes and continue

  9. Bring heat down to a simmer and let the smell of the sauce and meatballs slowly fill the house

  10. Stir every 5 to 10 minutes as you don’t want sauce to stick

  11. Six hours in add Lowry’s garlic salt or salt and pepper to taste

  12. Let simmer until pasta is cooked

  13. Cook whatever pasta you want per the directions on package

  14. Drain pasta and put it into a large bowl

  15. Spoon out meatballs into a bowl

  16. Spoon sauce over the pasta and mix well. Keep adding sauce until pasta is well coated with sauce

  17. Add parmesan cheese and mix well

  18. Plate pasta and top with sauce and parmesan, serve immediately



This pasta is great for leftovers
