Makes 6 buns
Mom had three recipes for bread and all were different but all were based on 22 pounds of flour. Therefore trying to recreate this recipe is going to be a challenge. So going to take you along for the ride. This recipe tasted good hot out of the oven with a little butter and sugar, the way my mom used to make it for me. However the inside was denser than mom's version.
Ingredients
2 tsp instant yeast
1 tsp sugar
1 cup warm milk
3 cups flour
1 tsp salt
2 tbsp olive oil
Directions
Place yeast, sugar and warm milk in bowl of stand mixer, stir and let sit for ten minutes
Using the kneading hook, add flour, salt and oil into bowl and turn mixer on to low speed
Using spatula scrap flour from sides into mixer
Ball will form, let the mixer keep kneading the dough for ten minutes
Take ball out of bowl and place on lightly floured board.
Knead for a minute and place ball into a bowl and cover with a cloth for an hour
Take ball and punch down dough and knead for a minute
Cut into six pieces and knead each individually to form a ball
Leave the balls on the counter and let them sit for an hour
Lay parchment paper on baking sheet
Place a baking pan with water in the lower rack (will help make crust crunchy and insides soft)
Preheat oven to 450°F
Knead each ball for and form into a ball and place on baking sheet
Take a sharp knife and cut into the bun at the side about a quarter inch deep
Bake bread for 20 minutes or until golden brown
Take out and let cool on cooling rack
