Makes: 2 ½ cups
My sister-in-law Lianne makes this tzatziki recipe and it is delicious with BBQ meat, as a dip for veggies or Lianne' Calamari recipe. Thank you Lianne!
Ingredients
1 cucumber
2 tbsp fresh dill
1 ½ tbsp fresh mint
3 cloves garlic
2 cups Greek yogurt
1 tsp salt
1 tsp garlic salt
2-3 tbsp olive oil
Directions
Grate cucumber and strain excess water by draining through a tea towel or cheese cloth, as shown, then put in medium size bowl
Wash and mince dill, mint and garlic and add to bowl
Add yogurt, salt, garlic salt and oil and combine well
Cover bowl and refrigerate for minimum 4 hours for flavours to absorb
Can be stored in sealed contain in refrigerator for one week
