These asparagus are served cold so you can make them ahead of time. The lemon amps up the asparagus flavour and goes well with any meat dish. Today I served it with my Melt in Your Mouth Chicken and Insalata Verdi which made it a great meal.
Ingredients
1 bunch of asparagus
Juice of 1 lemon
2 tbsp olive oil
1 finely chopped garlic clove
2 tbsp mayonnaise
¼ cup finely chopped parsley
Direction
Wash asparagus and snap the bottom ends off. TIP: Snapping instead of cutting the ends off the asparagus gives you the best tasting part of the asparagus when you cook it, because the process of snapping off the bottom is that the asparagus knows where to snap.
Steam asparagus for three minutes in microwave using a veggie steamer. You can also do this on the stove
Combine lemon juice, oil, garlic, mayonnaise and parsley in a bowl and mix well
Place asparagus in a serving dish and pour dressing over it
Combine until all of the asparagus has some dressing on it
Serve with any meat dish
