Makes: 16 Fritters
Created this recipe for a Thanksgiving dessert and it was a hit with the kids. Full of lemon and apple flavours.
Ingredients
3 granny smith apples
½ tsp cinnamon
2 tsp lemon juice
2 cups flour
1/3 cup sugar
½ tsp salt
1 tbsp cinnamon
½ cup milk
3 eggs
Canola oil for frying
2 cups icing sugar
¼ cup milk
Zest of 1 lemon
1 tsp lemon extract
Directions
Peel, core and chop apples into ½ cubes and place in a bowl
Stir in ½ tsp cinnamon and lemon juice
In a large bowl combine dry ingredients - flour, sugar, salt, cinnamon
In a smaller bowl beat milk and eggs together
Pour wet ingredients into dry and mix together with wooden spoon
Stir in apples until blended
In a tall skillet add 1 ½ inches of oil and heat
Using a thermometer heat oil to 350°F
Set up a baking sheet with a cooling rack next to stove, top rack with paper towel
Drop a tablespoonful of batter into the skillet at a time, don’t overcrowd the pan
Fry each fritter for 2 minutes on each side
Using a slotted spoon or wire basket spoon scoop out each fritter, shaking off oil
Place on paper towel so it absorbs the extra oil
Cook all the fritters and let cool on rack for ½ hour
Mix together icing sugar, milk, lemon zest and lemon extract
Place a cooling rack on parchment covered baking sheet covered
Dip each fritter in lemon icing and place on cooling rack
Once icing has set, place fritters on serving dish
