Leftover Frittatas

I love making this dish with anything that was left over from a special meal. This Thanksgiving I had two special meals turkey dinner and then morning breakfast. Therefore decided to use it all on the Tuesday night for dinner.

Ingredients

2 tbsp oil

½ onion

½ red pepper

Leftover turkey

Leftover stuffing

Leftover bacon

Leftover hash browns

½ cup shredded mixed cheddar cheese

6 eggs

½ cup milk

Directions

  1. Pre-heat oven to 390˚F

  2. Chop onion and pepper into small pieces

  3. Chop turkey, bacon and hash browns into ½ cubes

  4. Heat oil in large skillet. Must be able to go into oven. If handles are plastic you can wrap them in aluminum foil to protect them.

  5. Sauté onion and peppers until lightly golden

  6. Add turkey, stuffing, bacon and hash browns and cook for five minutes

  7. Sprinkle cheese all over and mix into mixture

  8. Scramble eggs and milk and add to skillet. Gently move the mixture so eggs go all over pan

  9. Place pan into oven and bake uncovered for 30 minutes

  10. Take out of oven and let sit for 10 minutes before serving

Serve with green salad and French bread
