Italian Sausage Bean Wrap

Serves: 3


Kick up this burrito style wrap by adding Italian sausage, then make it creamy with sour cream. Serve it with a side salad and you have a wonderful meal.


Ingredients

2 tbsp olive oil

1 finely chopped bell pepper

1 finely chopped shallot

1 pound hot or mild Italian sausage meat

1 can white kidney beans

1 tbsp tex mex seasoning

½ cup sour cream

1 cup shredded cheddar cheese

Cooking spray

6 medium soft tortilla shells

1 ½ cup shredded cheddar cheese


Directions

  1. Preheat oven 390°F

  2. Heat oil on high heat in skillet, add peppers and shallots and sauté for three minutes

  3. Add sausage meat and cook until browned

  4. Stir in kidney beans and seasoning and mix well

  5. Add sour cream and 1 cup of cheddar cheese and mix well

  6. Turn off heat and let cool for 10 minutes

  7. Spray baking pan with cooking spray

  8. Lay out tortilla shell and scoop 1/6 of the sausage mixture in middle of shell

  9. Roll all tortillas and place in baking pan with seam on bottom

  10. Sprinkle last batch of cheddar cheese on top of tortillas

  11. Bake for 20 minutes until cheese is bubbling and golden

  12. Let cool 10 minutes before serving with a side green salad
