Carbonara can be made with so many flavours and this one with Italian sausage and asparagus is a great pairing. Served with a rose wine makes it a wonderful meal.
Ingredients
400 grams dry pasta
1 cup asparagus
1 tbsp olive oil
1 pound Italian sausage meat
2 shallots finely chopped
Hot pepper flakes to taste (optional)
3 eggs
¾ cup grated parmesan
½ cup milk
¼ cup chopped parsley
Grated parmesan for garnish
Directions
Make pasta per directions on package
Clean asparagus, cut into 1 inch pieced and either steam or par boil until tender
Heat oil in large skillet, fry meat until brown and stir in shallots
Cook until shallots are translucent and stir in asparagus and hot pepper flakes
Beat eggs, parmesan and milk well
Using a pasta scoop, add pasta directly from water into meat pan
Stir until well combined and pour in egg mixture
Mix well and cook until eggs are fully cooked
Stir in parsley and plate
Sprinkle with parmesan and serve immediately
