Honey Rum Pork Pockets

Serves: 4 – 5


I wanted to make something different with fast fry pork filets and therefore came up with this stuffed version. I added rum and honey and the sauce was delicious. I served this with my Roasted Potatoes & Asparagus recipe which augmented the dish very well.


Ingredients

16 fast fry pork filets

Garlic salt or salt and pepper to taste

8 slice of ham

8 slices of Gouda cheese

¾ cup butter

1 cup flour

1 cup rum

¼ cup honey


Directions

  1. Remove fat off of pork filets

  2. Sprinkle garlic salt or salt and pepper to taste

  3. Place some filets in a large Ziploc bag and pound both sides until pork is ¼ inch thick, set aside and continue until all pork has been pounded

  4. Lay 8 pieces of pork on cutting board and top each with a slice of ham and cheese on each

  5. Top with another slice of pork

  6. Using a toothpick, spear through each pieces of meat so it hold the meat and filling together

  7. Set aside until you have completed putting together all 8

  8. Heat large skillet and melt half the butter

  9. Place flour in large plate and dip both sides of meat into flour until covered

  10. Add the flour covered meat into skillet and do this until the pan is full

  11. Cook the meat for about six minutes on each side, they will be brown

  12. When cooked take out of skillet and set aside on plate, cook the rest of the meat and add more butter as required to cook it

  13. Mix together rum and honey

  14. When the second set of meat is cooked return all meat to the skillet

  15. Pour in rum honey mixture and cook on high until liquid reduces by half and has thickened

  16. Scoop out two pork pockets per person and pour over some sauce on each

  17. Serve with roasted potatoes and asparagus
