Carrots are something I always have in the fridge and this recipe is quick and easy and can complement any meat dish.
Ingredients
2 bunches or a pack of Sweet Baby Carrots from Costco
3 tbsp butter
2 tbsp honey
3 tbsp maple syrup
¾ cup walnuts
Lowry’s garlic salt or salt and pepper to taste
Finely chopped parsley
Directions - Walnuts
Heat oven to 350˚F to toast walnuts
Arrange walnuts on baking sheet in a single layer
Bake 8 – 10 minutes, checking frequently
Let walnuts cool
Grind walnuts to small pieces and use both pieces and crumbly bits
Set aside
Directions - Carrots
Trim top off of carrots and leave 1 inch stem (if you purchased bunches)
No need to peel the carrots; just clean with unused scourers and scrub the carrots lightly to remove any dirt or small fibers.
Bring large saucepan of salted water to boil
Add carrots and cook 5 minutes or almost tender
Heat a frying pan over medium heat
Melt butter and add honey and maple syrup
Add carrots and cook 4 – 5 minutes, shaking pan until carrots start to blister a bit
Add walnuts and toss to combine
Season to taste and tip onto a serving dish
Garnish with parsley
